Coffee Cacao Chia Parfait

Coffee chia layer: 

  • 1c almond milk
  • 2 packets Mushroom Coffee (either flavor works!) 
  • 1/2c chia seeds

Vanilla chia layer: 

  • 1c almond milk
  • 1/2c chia seeds

Chocolate layer and drizzle: 

  • 1 70% dark chocolate bar
  • 2T coconut oil

Cacao Nibs

 

For coffee chia layer, heat up almond milk in a microwave-safe bowl for 2 minutes until steaming hot. Add 2 packets of Mushroom Coffee and blend until dissolved. Let mixture cool, then add chia seeds and stir vigorously. Continue to stir every few minutes to ensure no lumps form. Place mixture in refrigerator and repeat process with vanilla layer in a separate bowl. While both chia layers are chilling, melt the coconut oil in the microwave or over the stovetop. Break up chocolate bar into chunks and add to coconut oil, stirring continuously until melted and smooth. 


Once chia mixture have chilled for about 15 minutes, spoon coffee mixture into bottom of a clean glass. Add cacao nibs, and another layer of coffee chia. Pour a layer of chocolate mixture, and stick in freezer to harden for 5 minutes. Add vanilla chia layer, and finish with more chocolate sauce to layer and drizzle.
